I'm about to knock out after drinking 2 "Buon Apetitos", which got the aproval of our water at Rolf & Daughters. The restaurant was voted 3rd best restaurant in the nation, so we had to eat there. After I Googled everything on the menu, I was able to decifer what not to order. And while eating amazing fancy little foods, and talking about work with collegues, I feel I deserve to now sit in my hotel room watching QVC while eating peanut M&M's til I pass out. Right?
Country Music Awards
I'm grateful for the expnsive dinner, and the celeb siting (We saw Seth Myers from SNL. How random is that?) But, honestly, this is the only time I EVER get to sleep a full night without interuption, so I want to get to it! I can read a magazine and watch MY shows. I can eat my bad-for-you snacks without explanation. This is a guilt-free mommy moment & I may even order a pair of shoes online, on sale. To me that is money well-spent. I'd rather have a new pair of boots for fall, than a roasted beet salad with puffed quinoa grains & goat yogurt. Call me crazy.

There are certian things that remind me of my youth in Los Angeles. 4th generation mexican Dad, who still loved traditional dishes, but couldn't handle the spicy stuff. (I love to kid him about that one) But my grandmother always made food, and made sure everyon got what they liked. Our menudo always had one pot with tripe and one pot vegitarian. And when she baked fresh pumpkin seeds, we did a savory batch and a sweet.
It's important for me to pass along cultural traditions to my children. Makungrecipes like this one during the Fall season, brings the spirit of the holidays and the memories of my grandmother right into our home. My husband and I like a little "kick" to our batch, so this recipe works well.

Spicy Roasted Pumpkin Seeds
Spray a baking sheet with nonstick cooking spray. Combine the pumpkin seeds with the garlic powder, salt, crushed red pepper, and black pepper on prepared baking sheet and toss to combine. Bake for about 15 minutes, or until seeds are crispy and light golden brown. Remove from the oven and stir with a spatula or wooden spoon to release any seeds that have stuck to the baking sheet, and cool completely before serving.
Roasted seeds will keep in an airtight storage container for up to 1 week.
Kristin's Tip: If you are sensitive to spicey, then I would recommend 1/2 the red pepper flakes. But for us it's perfect just the way it is. Also, you can use 1Tb of butter and 2Tb of Veg Oil with the spice mix to help coat the seeds. If you like extra crispy: After 15min I crank the heat to 425 and leave for another 7min.
